Brits Try Mexican Taquitos for the first time! & we were not ready!
MrHandFriendsThis one started with leftover chicken… and turned into something incredible. Today we’re making Chicken Taquitos — a Mexican-inspired dish that we believe either originated in California or became hugely popular through Tex-Mex cooking. Either way, this was a first for us, and we honestly weren’t prepared for just how good they’d be. We kick things off by making Mexican rice from scratch, something we’ve never done before on the channel. Instead of boiling rice the usual way, we toast it first with onion, spices, and seasoning before adding stock and tomato — a totally new method for us, and one that completely changed the flavour. Then it’s onto the chicken taquitos: Leftover roast chicken, seasoned and mixed with cheese, cream cheese, a little salsa, and (yes…) some spinach — rolled up in corn tortillas and fried until golden and crispy. As Brits, this way of using leftovers is completely different to what we’re used to. Normally, leftover chicken would end up in a sandwich, a pie, or a curry… but rolling it up and frying it until crispy? That’s a whole new world for us — and one we’re very glad we discovered. We served everything up with: 1) Mexican rice 2) Beans 3) Sour cream Fresh salsa Crispy chicken taquitos And honestly… this might be one of our favourite meals we’ve ever made on the channel. 🔥 Would we make it again? KEN'S SOUTHERN LIMA BEANS {QUICK COOK STYLE} 1 lb. Dry Large Lima Beans, Sorted Water 6 oz. Ham Pieces, Cut or Ham Hocks or Jowl Pieces or Bacon Pieces Salt, to Taste @McCormickVideos Peppercorn Medley, to Taste 1/4 tsp. Onion Powder, Optional Chopped Green Onion, Optional Making sure to pick out any objectionable beans, place into a large pot and cover with two inches of water. Bring the pot to a rolling boil and let set two minutes before cutting off the heat, covering, and letting the beans soak for one hour in the boiling water. After an hour wait, stain off the water from the beans. Add ham, salt, pepper, and optional onion powder to taste. Use less salt than you think you will need to avoid over salting. Pour in fresh water into the pot, covering about two inches from the top of the beans. Bring to a boil and reduce to a simmer before lidding. Let cook for one to two hours. Different cooks like different doneness levels of the lima beans. It is generally accepted that the lima beans are done when at least a quarter of the beans are empty shells. Most cooks prefer anywhere from a half to three-quarters of the beans to be cooked to empty hulls. This thickens the beans and makes them more like a thick bean soup than a traditional boiled vegetable. Serve in a bowl like you would a thick soup. Generally speaking, chopped green onions and large "cathead" biscuits (usually made with buttermilk) are served on the side for people to eat with their lima beans.64 views -

Fig Jam, Prosciutto & Bacon Flatbreads: https://blackstoneproducts.com/blogs/recipes/fig-jam-prosciutto-bacon-flatbreads Ingredients 4 naan flatbreads 8 to 10 slices thick cut bacon 1 sweet Vidalia onion, thinly sliced (or yellow onion) Olive oil, as needed 1/2 to 3/4 cup fig jam 1 to 1 1/2 cups shredded mozzarella cheese Goat cheese, crumbled, to taste Prosciutto slices, torn Fresh arugula Hot honey or regular honey, for drizzling Fresh figs, thickly sliced (optional, for topping) Water, for steaming on the griddle Directions 1. Preheat a griddle to medium-high heat. Cook the bacon until crispy, flipping as needed. Transfer to paper towels to drain, then chop into bite-sized pieces. 2. Add a small amount of olive oil to the griddle and cook the sliced onions until caramelized, stirring occasionally. Add a splash of water near the end to help release the natural sugars. Set aside. 3. Spread a generous layer of fig jam over each naan flatbread. 4. Lightly oil the griddle and place the flatbreads over low heat. Sprinkle with mozzarella cheese, cover with a lid or dome, and cook until the cheese is melted and the bottom is lightly crisped. 5. Remove flatbreads from the griddle and top with caramelized onions and chopped bacon. 6. Finish with arugula, prosciutto, crumbled goat cheese, and a drizzle of hot honey or regular honey. 7. Add sliced figs on top if using, then slice each flatbread into four pieces and serve warm. Lasagna Pasta: https://blackstoneproducts.com/blogs/recipes/lasagna-pasta Ingredients 1 lb ground beef or Italian sausage (or a mix of both) 2 Tbsp olive oil ½ yellow onion, diced 3 cloves garlic, minced 1 tsp Blackstone Tuscan Herb Seasoning 1 tsp salt ½ tsp cracked black pepper 1 cup marinara sauce 1 cup ricotta cheese 1 cup shredded mozzarella cheese ¼ cup grated Parmesan cheese 8 oz cooked pasta (reserve ½ cup pasta water) 1 Tbsp butter Fresh basil, chopped, for garnish Directions 1. Preheat the Blackstone griddle to medium heat. Drizzle the olive oil onto the griddle and spread evenly. 2. Add the ground beef or sausage and break it apart with a spatula. Season with Tuscan Herb seasoning, salt, and pepper. Cook until browned and fully cooked. 3. Push the meat to one side of the griddle. Add the diced onion and minced garlic with a little extra oil if needed. Cook until softened and fragrant, then mix into the meat. 4. Pour the marinara sauce over the meat mixture and stir to combine. Let it simmer gently so the sauce reduces slightly and absorbs flavor. 5. Add the cooked pasta directly to the sauce mixture. Toss gently to coat evenly. Add a splash of the reserved pasta water as needed to loosen the sauce (you may not need all of it). 6. Sprinkle the shredded mozzarella evenly over the pasta. Cover with a dome and cook for 1–2 minutes, until the cheese is fully melted. 7. Add spoonfuls of ricotta across the pasta. Gently toss so the ricotta creates creamy pockets throughout the dish. 8. Sprinkle the grated Parmesan evenly over the top. 9. Add the butter and allow it to melt through the pasta for added richness. 10. Garnish with fresh basil and serve hot, family-style, straight from the griddle.
