Roast for 30 -45 minutes, until browned ⸻ Step 4: Build Your Broth 1. Add the roasted bones to a large stock pot or crockpot 2. Add: • Chopped onion, carrots, celery • Garlic, peppercorns, bay leaf • Salt to taste (start with ½ to 1 tbsp) • 2 tbsp apple cider vinegar (key for collagen extraction) 3. Cover with filtered water, just enough to submerge the bones. 4. Bring to a simmer, then reduce heat to low. 5. Simmer for 18 to 36 hours ⸻ Step 5: Strain and Cool 1. Strain the broth into a wide bowl using a fine mesh sieve. 2. Add a couple of ice cubes to cool quickly. 3. Once room temperature transfer to refrigerator 2 hours to overnight ⸻ Step 6: Chill and Store 1. Once the fat solidifies, skim it off the top. 2.
