Today Chef EK shares his VANILLA SPONGE RECIPE. You'll learn the secret to baking this perfect sponge in this video. The recipe is specific, as well as the technique! there is no baking powder or baking soda in this recipe, instead Chef EK used a french meringue to keep the volume and softness

1)Separate your egg whites and egg yolks
2)Use an Egg Beater to start whipping the egg whites
3) Slowly add in the sugar to make a fluffy French Meringue
Adding in the sugar too quickly will result in a liquid mix rather than a fluffy, buoyant one.

4)Add the Vanilla and continue to mix
5)Mix in the egg yolks one at a time and mix until completely combined
6)Add the Flour
7)Add the Oil and mix with a spatula

Once the flour is added only mix with a spatula or fold by hand, using an electric mixer will flatten the batter and prevent it from rising in the oven

8)Portion into an 8 inch mold
9)Preheat your oven to 165c/330f

Place a baking tray and add water as you preheat the oven (see video)

10)Steam Bath Bake your sponge for 55-60 minutes

Remove your sponge from the mold immediately after taking out of the oven, let cool for 2-4 hours
