How To Make Red Lentil Pancakes [5 Ingredients]
5 Ingredient red lentils pancakes - perfect for either breakfast or dinner (or lunch too). Blend some soaked red lentils with water, nutritional yeast, chickpea flour, baking powder and salt. Makes 6 pancakes total.
1 cup red lentils, covered in water and soaked for 2 - 3 hours
2 cups water
2 tablespoons nutritional yeast
2 teaspoons chickpea flour
1/2 teaspoon baking powder
Soak the red lentils for 2 - 3 hours in water. Drain, and then add to a blender with the water, nutritional yeast, chickpea flour, baking powder and salt. Blend until smooth.
In a crepe pan or non-stick pan over low-medium heat, pour the batter and cook on each side for 2 - 3 minutes, until lightly golden brown. Let cool for a couple minutes, and then dig in. Top with hummus or yogurt or really anything you want.
