Kefir pizza crusts and breadsticks!
Hello again! This is Lori Fiechter spending a cold January day in a warm kitchen, baking pizza crusts and breadsticks. I keep a supply of par-baked pizza crusts (that's not a typo!) in the oven so that I can make homemade pizza in just a few minutes prep time. What makes my crust different is that I substitute milk kefir for half the water. It makes a soft dough that is easy to work with and it's a great way to use up kefir that tends to multiply out of control!
I simply mix everything in the bread machine. Here are the ingredients:
Pizza crust/breadsticks/ Focaccia
1 cup warm water
1 cup milk kefir
1 T. sugar
2 T. olive oil (I used sunflower)
1 1/4 tsp. salt
2 cups whole wheat flour (I use white wheat)
2-3 cups bread flour (I use King Arthur)
1 T. instant yeast
1 T. dough conditioner (opt.)
