First Nixtamalization Test

Ok, so I saw online you could heat up baking soda to change its chemical structure and use it as an alkalizing agent.

So I gave this a go today. Lesson learned was that it is probably better to heat up only the already soaked dry corn, or to soak the dry corn for a day or two before boiling. The boiling was not effective at penetrating inside the corn. I will experiment with this again.
