Recipe no. 21. Chicken breast and Serrano ham tartare

Note: If I was American I could have called it Chicken breast and prosciutto. Prosciutto is the Italian for ham. In American English it has come to mean any cured, dried ham like Parma ham etc. any of which you could use in the recipe.
