The pimiento flesh is sweet, delicious, and more aromatic than red peppers. Several varieties of the pimiento variety are spicy, including the Floral Gem and Santa Fe Grande varieties. Fruits are usually consumed fresh or pickled. Pimiento has the lowest Scoville scale rating of all chili varieties.
