Brittle Pancake

A very old Thai street food loved by children and the elderly. It's made from rice flour, palm sugar and cooked over hot coals. The Thais call it khaw keinb waw. It cooks rapidly and expands into a sweet giant crisp.The cooking process is the secret here and some delicate handywork is required. It's very brittle so you need to be careful handling this one. Can also be used to keep the rain off your head, lol!
