Description – These smoked sausages were amazing. Thank you Costco! haha.

Pretty easy recipe, see ingredients below.

2-3 links smoked sausage (these were small diameter)
2 eggs
1 cup of chopped onion
1 cup chopped peppers (I used jalepeno)
3 white corn tortillas
Salsa
Hot sauce
Shredded cheese (I used Monterrey jack and cheddar blend)
Salt
Pepper
Olive oil
Butter

Cook onions till translucent with some olive oil, butter, salt, and pepper.

Add sausage and cook till browned.

Toast tortillas

Fix eggs

Assemble your taco

Enjoy!
