Steak Quesadillas on the Blackstone Griddle

Boy we love quesadillas, but realized talking with the wife, I haven't filmed a video of them. Cross that off the list!

Steak marinade:

1.5 lbs of sirloin or flank
1.5 teaspoons salt
1 teaspoon pepper
1-2 teaspoon chili pepper
1.5 teaspoon cumin
1 teaspoon coriander
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 juice of lime
zest of 1 lime
1-2 tablespoons EVOO

Stir and add meat to incorporate.

Sour cream:

8 oz sour cream
Cholula chipotle hot sauce
Squeeze of lime

Hand grated colby cheese
Hand grated monterey jack

1 yellow onion
1 can of Hatch green chiles
