Carrot Soup nom nom

Tim's carrot soup recipe
1 large chopped onion
A bunch of carrots, sliced
1 kettle of boiling water
1 or 2 vegetable stock cubes
Salt & pepper to season
Sprinkle of ground coriander
(optional) 1 to 2 tsp. chilli oil depending on your chilli tolerance
Quantities are not critical, you can't really go wrong, just eyeball it.
In a large pot, add some olive oil and fry the onion to soften.
Add the sliced carrots, enough boiling water to just about cover the carrots.
Crumble in the stock cubes and all remaining ingredients.
Simmer until the carrots are softened, then whizz up in a blender, and serve.
