How to make a delicious chicken basquaise?
Spotlight on the delicious Chicken Basquaise, a south of France traditional recipe (Basque area)!! This dish is just amazingly good... I dare you to resist to second helping!!!
In this video I also wanted to show you how to cut a whole chicken, that can be helpful for many other recipes as well 😀 #frenchcuisine
Ingredients:
- Green Pepper 1
- Red Pepper 1
- Red Onion 1/2
- Tomatoes 6
- Chicken
- White wine 150ml
- Soft Chili 1pc
- Garlic 2 cloves
- Olive oil few spoons
- Duck fat few spoons
- Thyme 5g
- Rosemary 5g
- Sugar 1 pinch
- Smoked ham 2 slices
1. Cut the chicken into quarters
2. Add some duck fat in a pan, sear the chicken in it and set aside
3. Slit the bottom of tomatoes and add in boiling water for 20-30sec
4. Remove the skin and pulp of the tomatoes, and cut it into small cubes
5. Slice and add peppers, onions and garlic
6. Add it to a pan with white wine, rosemary and thyme
7. Chop and add 2 slices of smoked ham
8. Add a cup of water and the chopped tomatoes. Season with salt, pepper and a pinch of sugar
9. Slow cook it for 20mn
10. Add the chicken, cover the pan and slow cook it again for 40mn
11. Bon appetit!!

Ingrédients:
- Poivron vert 1
- Poivron rouge 1
- Oignon rouge 1/2
- Tomates 6
- Poulet
- Vin blanc 150ml
- Piment doux 1
- Gousses d'ail 2
- Huile d'olive quelques cuillères
- Graisse de canard quelques cuillères
- Thym 5g
- Romarin 5g
- Sucre 1 pincée
- Jambon fumé 2 tranches
1. Coupez le poulet en quartiers
2. Ajoutez un peu de graisse de canard dans une casserole, et faites-y saisir le poulet et le mettre de cote
3. Coupez le dessous des tomates et mettez-les dans de l'eau bouillante pendant 20 à 30 secondes
4. Retirez la peau et la pulpe des tomates et coupez-les en petits cubes
5. Tranchez et ajoutez les poivrons, les oignons et l'ail
6. Ajoutez le tout dans une casserole avec du vin blanc, du romarin et du thym
7. Hachez et ajoutez 2 tranches de jambon fumé
8. Ajoutez une tasse d'eau et les tomates hachées. Assaisonnez avec du sel, du poivre et une pincée de sucre
9. Faites cuire lentement pendant 20mn
10. Ajoutez le poulet, couvrez la casserole et faites cuire à nouveau pendant 40mn
11. Bon appétit !!
