Mashed potatoe stuffed meatloaf

Make instant mash potatoes
1 lb hamburger
1 egg
1/2 cup green or yellow peppers
1/2 cup quick oats
1.4 chopped onions
Mix together
Flatten out on Pharchment paper
Put mash potato down center
Roll like a jelly role
Bake at 350 for 30 minutes
Remove from oven
Top with 1 can (11.5 ounces ) tomatoe juice
1/2 cup ketchup
