Cheesy Poblano Corn Bread makes for the best holiday meal side.
Dice a poblano and half an onion and start cooking down for a few minutes, mix up 2 boxes of Jiffy mix following the directions but add 1 can of cream style corn and 1 cup of cheddar cheese along with sweet heat seasoning. Pour into the baking pan with the poblano and onions and cook at 350 degrees until a toothpick pulls out with no corn bread stuck to it.
