HOMEMADE DOUGHNUTS RECIPE
Ingredients:
1 kg of flour
500 ml of milk
150 grams of sugar
20 grams dry yeast
50 ml oil
5 eggs
1 tablespoon vanilla essence
1 tablespoon lemon essence or lemon zest
Pinch of salt
Filling:
Nutella or chocolate spread
Jam
Directions:
Add the flour in a food mixer bowl. Separately in a small bowl add the dry yeast and half of the milk, making sure the milk is lukewarm. Mix the dry yeast until you get a smooth paste, then make a dip in the flour and add the yeast mix. In the same food mixer bowl where you have the flour and yeast, add the eggs, sugar, oil, vanilla essence, lemon essence, the salt and the remaining mix. Mix all the ingredients with the food mixer until you get a smooth elastic consistency dough. Transfer the dough in an oiled large bowl, take clingfilm and brush it with oil and add it on top of the dough. Leave the dough to rise for 1-2 hours, until it triples in size. You can check if the dough is ready by piercing it with your finger. If the dough deflates, it's ready, if it springs back, you need to leave it for longer.
Oil a work surface, then remove the dough from the bowl and separate into 3 equal pieces. You can use flour instead of oil, but I find when using oil, the dough doesn't stick to the work surface. Take one piece of the dough, knead it a bit by hand to get rid of the air bubbles, then roll it with a rolling pin to around 3cm in thickness. You can use any cookie cuter or even a glass to cut out shapes.
In a deep frying pan add around 500 ml of oil, you will need this to deep fry the doughnuts. Make sure the oil is hot before adding doughnuts to fry. The doughnuts are ready when they are golden brown on each side. Repeat with the remaining dough.Transfer onto a plate with kitchen towel to absorb the oil. Allow to cool and then you can start filling them.
I used Nutella to fill some of my doughnuts and I also used jam. You can use any filling you like. To fill your doughnuts you can either use a piping bag or a syringe. I also added icing sugar on top of mine and I did a few without filling, run through homemade cinnamon sugar.
