This is a really yummy one pan dinner if you like your food with a good spice. The combination of the chicken and sausage compliment each other well with the cajun seasoning. A must try for a mid-week easy meal. - Michele

Ingredients:

1 lb. boneless/skinless chicken breast, cubed
2- Andouille sausages, sliced in 1 in. rounds
1 1/2 tsp cajun seasoning
2-3 tsp. olive oil
1 cup zucchini, sliced or cubed
1 small red onion, sliced
2 large red or yellow sweet peppers, sliced
1/2 tsp salt
1/2 tsp pepper

Instructions:

On a large sheet pan, toss together chicken, sausage, cajun seasoning and oil to coat. Bake for 18-20 minutes @ 400 degrees. Remove from the oven and add: zucchini, red onion, peppers, salt and pepper. Toss to coat. Place back in oven for 8-10 minutes @ 400 degrees until veggies are al dente. Remove and serve immediately over rice.
