In a bowl, add fresh corn kernels, chopped tomatoes, chopped jalapenos, chopped onions, chickpeas, and cilantro. Season with salt, pepper, cayenne pepper and lemon juice to taste

Easy Vegan Creamy Corn Soup:
In a saucepan, add the vegetable butter. After the butter has melted, add the chopped onions, shallots, garlic and green onions. Turn it over to coat it with butter. Let them cook until fragrant. Add the chopped carrots, potatoes, fresh corn kernels, and enough coconut milk to cover the vegetables. Cover and cook until the vegetables are tender. Season with salt and cinnamon. Add cilantro. Scoop out a third of the soup and blend it in a blender, then pour it back into the soup. Corn soup is ready.
