I've shown this noodle making shop in 2019 before. Here's another short video. Taiwan has amazing noodles because there are plenty of shops like this that making fresh noodles from scratch for all the breakfast and lunch restaurants to serve to their customers. Each noodle is bespoke for the custom. Pretty awesome ehh?
