In this video, I discuss the dangers of evil maid attacks on Bitcoin hardware wallets, and how to guard against them.

One way to protect against an evil maid attack is to wipe your hardware wallet after confirming your recovery seed backup (12 or 24 words), and then just store your recovery seed in a secure and tamper-proof location.

Recovery seeds should never be stored online or in the cloud in any format (text, image, etc). Anyone who gets access to your recovery seed can steal your Bitcoin.

The best protection for larger amounts of Bitcoin is to use a multi-sig setup, where multiple signatures are needed to send/spend your Bitcoin.
