Citrus Tilapia and Rice

Ingredients:

2 cups Cooked Rice
Zest of 1 Lemon
1/4 cup Lemon Juice
4 Tilapia Filets
Seasoning of your choice

Instructions:

Preheat oven to 350º F.
Stir lemon zest and juice into rice.
Add to 8-inch baking dish that has been coated with cooking spray.
Liberally season both sides of the tilapia and add over rice.
Bake for 25 minutes or until tilapia is thoroughly cooked.
