Slow Cooker Cajun Shrimp and Rice

A quick, cajun-flavored meal! 😄

Ingredients:

1 lb. Shrimp
1 Onion (chopped)
1 Bell Pepper (chopped)
2 cloves Minced Garlic
1 6.25 oz. box of Long Grain and Wild Rice (with seasoning packet)
28 oz. Diced Tomatoes
1 tsp. Cajun Seasoning
14.5 oz. Chicken Stock
1/4 cup Water

Instructions:

Add all ingredients to slow cooker except shrimp.
Cook on High for 3-4 hours, or Low for 5-6 hours.
Add shrimp and cook on low for an additional 15 minutes or until shrimp becomes pink.
