Chicken halves are a great, Salt and pepper the all over and cook indirect at 250 degrees with some hickory wood, or pellets until the internal temp reaches 165 and baste with your favorite BBQ sauce, just a thin layer and let it cook an additional 10 minutes for the sauce to tack up.
