Stuffed Omelet

What better way to start your day, make a delicious Stuffed Omelet. This Recipe is for 2 Omelets but it's easy to divide everything in half and make one.
Ingredients:
(makes 2 Omelets),
4 Egg (beaten),
2 tbsp Half n Half,
Salt, Pepper,
2 tbsp Butter,
Filling:
10 Shiitake Mushroom (sliced),
1/2 cup Ham (diced)
10 Grape Tomato (halved),
1/2 cup Mozzarella Cheese (shredded),
1 Shallot (sliced),
1 tbsp Butter
