People really overthink this.
1.) train heavy
2.) hit your protein and fat goals then fill the rest of your caloric needs with carbs. Slight caloric deficit to lose weight; slight caloric surplus to gain weight
3.) increase calories by 150-200 every 3 weeks if pursuing a surplus; decreases calories by 100 every 3 weeks if trying to consistently lose weight.
Stop watching so many videos on YouTube. Everyone’s trying to make money off of your incompetence, so keep it simple and stay focused.
