蛋吃多膽固醇高? 3食物才該少碰

坊間一直流傳雞蛋若吃太多的話,會導致膽固醇飆高,並影響身體健康。不過,台灣營養師沈宛徵卻駁斥了這項說法,直指不論飲食吃進多少的膽固醇,其實都不會影響到血液中的膽固醇含量,而是應該要減少攝取含有飽和脂肪的食物,例如肉類、酥皮以及蛋糕。
沈宛徵指出,人類在把食物吃下肚後,肝臟會從中攝取到飽和脂肪與反式脂肪,並刺激生成膽固醇。但如果吃了太多肉類、酥皮、蛋糕等含有飽和脂肪的食物,就很容易有脂肪沉積物堆積在動脈當中,提升動脈硬化、中風、心臟病等風險。
不過,沈宛徵解釋,由於人體所需的膽固醇有80%是由肝臟生產、20%為飲食補足,因此從食物中攝取的膽固醇,其實不會直接影響到血液當中的膽固醇含量。然而,假設吃了太多飽和脂肪的話,就會影響到心血管的健康,且若以1根香腸與1顆雞蛋來比較的話,前者的飽和脂肪更是比後者多了10倍。
沈宛徵指出,儘管每天都吃一顆蛋的話,並不會導致膽固醇飆高,但若想要維持心血管健康的話,仍有3種吃蛋的妙招。首先,可以選吃白煮蛋、茶葉蛋、蒸蛋等用油較少的「低油量蛋料理」。其次,則是要在吃蛋時避免培根、火腿、香腸等高油加工食品,並搭配一些蔬菜食用。
