Here's a recipe for Keto Crème Brûlée:
Ingredients:
2 cups heavy cream
1/2 cup granulated erythritol or other low-carb sweetener
4 egg yolks
1 tsp vanilla extract
1/4 tsp salt
2 tbsp granulated erythritol or other low-carb sweetener for the topping
Instructions:
Preheat the oven to 300°F (150°C).
In a medium saucepan, heat the heavy cream and 1/2 cup of sweetener over medium heat until it comes to a simmer, stirring occasionally.
In a separate bowl, whisk together the egg yolks, vanilla extract, and salt until well combined.
Slowly pour the hot cream mixture into the bowl with the egg yolks while whisking constantly.
Once the mixture is fully combined, pour it into 4-6 ramekins or custard cups.
Place the ramekins in a baking dish and add enough hot water to the dish to reach halfway up the sides of the ramekins.
Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, cover them with plastic wrap and refrigerate for at least 2 hours, or overnight.
When ready to serve, sprinkle the remaining sweetener on top of each custard.
Using a kitchen torch, carefully melt the sweetener until it forms a caramelized topping.
Serve and enjoy!
Note: Be sure to keep a close eye on the custards while using the torch to avoid burning them. If you don't have a kitchen torch, you can also broil them in the oven for a few minutes until the sweetener is melted and caramelized.
