Crispy Breakfast Wrap

1 small Red Potato, diced,
1 tbsp chopped Onion,
3 Breakfast Sausage, sliced,
1 Green Onion, chopped,
2 Eggs,
Salt,
Italian Seasoning,
Pepper,
2 tbsp Butter,
1.5 oz Monterey Jack Cheese, shredded
