A risotto recipe that I usually make during the week for my family.

Ingredients:

• Oil
• 1 onion
• 2 cambuci peppers
• 200g of bacon
• 3 cloves of garlic
• 100 g of tomato sauce
• 2 cups of arborio rice
• 1 liter of vegetable broth
• 3/4 cup dry white wine
• 1 tablespoon of butter
• 50 g grated parmesan cheese
• Chopped chives
• Black pepper to taste
• Salt

Method:

Chop the bacon into cubes. Also chop the onion, peppers, garlic and chives.

In a pan, put a drizzle of olive oil, add the bacon and fry a little, add the onion, the peppers and fry until the bacon is toasted. Add the garlic, tomato sauce and let it braise some more.

Add the rice and fry well.

Add the white wine, and keep stirring, as soon as the wine dries up, season with pepper and a little salt (consider that bacon and cheese contain salt), add the vegetable broth, continue cooking by adding the broth little by little, stirring constantly so as not to stick to the bottom of the pan.

As soon as the rice reaches the point of your preference, lower the heat, add the cold butter, cheese and mix well.

Finish with the chopped chives.
