RECIPE: Wild Pork Backstrap with Datil Pepper Honey Glaze
For the Rub:
* 1 tablespoon garlic salt
* 1/2 tablespoon ground pepper
* 1 teaspoon chili powder
* 1 tablespoon thyme
* 1/2 tablespoon rosemary
* 3 tablespoons butter
For the Datil pepper honey glaze:
* 1/2 cup honey
* 1/3 cup brown sugar
* 1 tablespoon garlic minced
* 1/3 cup light soy sauce
* 1/3 cup orange juice
INSTRUCTIONS
* Preheat Traeger or grill to 400°F. Remove any fat from pork. Using a fork, puncture the pork in several places.Â
* Add all the rub ingredients together in a small bowl and spread on all sides of the pork, pressing firm to really get the rub on the pork.Â
* Using a cast iron skillet, heat over medium-high heat and add butter. Allow butter melt then place pork in skillet and sear just until brown, flipping to sear all sides, about 1-2 minutes. Add another tablespoon of olive oil to ensure there’s enough moisture in the pan then Place skillet in the Traeger or oven (preheated to 400 degrees) and roast for 10 minutes or until cooked to 165 degree internal temperature.Â
* Meanwhile in a small saucepan add all ingredients for datil pepper honey glaze, Whisk to combine and bring to a slight boil. Â
* Remove from heat and set aside.Â
* Remove pork from the Traeger or oven and baste with datil pepper honey glaze. Place either back on the hot grill straight over the heat or the oven to "HI" broil and broil pork for about 2 minutes to allow sauce to caramelize. Let rest 5 minutes covered, slice and garnish with fresh chopped thyme and rosemary.
