I've been avoiding Birria tacos for two years now because I was scared. Well I made a cheat crockpot version that turned out amazing. They definatly are not traditional Birria tacos but they are easy and delicous, so that's good enough for me.

Recipe:

2lb Chuck Roast
1 medium white onion diced
1 15 z can diced tomatoes
1 chipotle peppers in sauce diced
1/2 tablespoon cumin
1/2 tablespoon oragano
1 tablespoon diced garlic
1/2 tablespoon of Salt and Pepper
2 Cups of Beef Stock
1/2 Cup of Carrots

Cook for 6-8 hours on low.
