Dandelions are an overlooked edible plant. Use the flower portion to make a delicious jelly also known as Poor Man's Honey.
2 cups of Yellow flower part only
4 cups of boiling water
2 TBL of Lemon Juice
4 cups of Sugar
Waterbath can for 10 minutes - adjust this time according to your elevation.
