S04E14 Becker's Easy Eats: Easy Coronation Chicken

Coronation Chicken, credited to Constance Spry and Rosemary Hume, was first served in 1953 for the banquet of Queen Elizabeth II's coronation. It is a very simple dish of cold poached chicken drizzled in creamy curry sauce and served with rice salad.

I understand King Charles III has chosen quiche to be served in his coronation banquet, but I still would like to make this dish in honor of the late Queen.

Coronation Chicken has taken many forms since. It is most popular in the UK as a sandwich filling, which of course is awesome as well. But for this video recipe, we shall stick of the original form.

EASY CORONATION CHICKEN

Ingredients:

2 pcs chicken breast (150g each)
4-5 peppercorns
1 bay leaf

4 tbsp olive oil
½ cup chopped onions
2 tsp curry powder
½ cup red wine
90ml water
1 tsp salt
½ tsp ground black pepper
1 tsp brown sugar
2 slices lemon+ juice
1 cup mayonnaise
3 tbsp cream
½ tbsp apricot preserve

1 ½ cup cooked rice
¼ cup chopped cucumber
¼ cup cooked green peas
5 tbsp French vinaigrette
