Delicious Egg Tomato Pulusu Recipes for a Healthy food.

Fixings:
Bubbled eggs - 10
Onion - 3
Tomato - 2
Cumin seeds - 1 tsp
Narrows takes off - 2
Turmeric powder -3/4 tsp
Ruddy chilli powder -1.5 tsp
Dry Fenugreek Takes off - 1 tsp
Salt to taste
Cooking oil - 5 tbsp
For Masala
Ginger Garlic Glue -1 tbsp
Cumin seeds - 1 tbsp
Coriander seeds -1.5 tbsp
fennel seeds - 1 tbsp
Dark pepper- 7-8
Nutmeg - 1/4 inch
Green cardamom - 2
Dry ruddy chilli - 4
Mace - 1/4 inch
Cinnamon adhere - 1/4 inch
Instructions:
Hard boil the eggs, peel them, and set aside.
Heat oil in a deep pan or kadai over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
Add chopped onions and green chilies to the pan. Sauté until the onions turn golden brown.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add the sliced karela (bitter gourd) to the pan and cook for 4-5 minutes until they become slightly tender.
Now, add the chopped tomatoes and cook until they turn soft and mushy.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
Dilute the tamarind paste in 1 cup of water and add it to the pan. Stir everything together and bring it to a boil. Reduce the heat to low and simmer for about 10-12 minutes, allowing the flavors to meld.
Meanwhile, make shallow cuts in the boiled eggs using a knife, which will help them absorb the flavors of the curry.
Gently add the boiled eggs to the pan, making sure they are immersed in the curry. Cover the pan and let it simmer for another 5-7 minutes so that the eggs absorb the flavors.
Finally, garnish with freshly chopped coriander leaves.
