2 pounds lean ground beef
1 medium onion chopped
4 heaping tablespoons tomato paste
1 teaspoon garlic powder
1 teaspoon chili powder
2 cup uncooked elbow macaroni
6 cups beef broth
2 to 4 cups freshly grated cheddar cheese
Salt & pepper to taste
Cook beef over medium-high heat until the beef has browned (about 7-10 minutes), breaking the meat up as you go . If there's a lot of excess fat, strain it out.
Fry up one chopped onion.
Transfer to a large pot, Add in the beef broth, garlic powder, and chili powder.
Stir in the tomato paste and increase the heat to high. Once it starts boiling, add in the macaroni.
Reduce the heat to a slow boil over medium heat. Let it cook uncovered until the pasta is tender and most of the liquid has been absorbed (about 13-15 minutes). I stir it every couple of minutes.
While it's cooking, grate the cheese
Take the pot off the heat and stir in the cheese. Season with salt & pepper as needed. Let sit for a couple minutes to melt the cheese
