Strawberry Mousse without Heavy Cream
Recently, I found an old cookbook while I was packing at home. The book belonged to my grandmother. I flipped through its yellowed pages, filled with old-fashioned recipes and writings. The handwriting of my grandmother is almost unreadable now, with the yellowed and faded letters, but it's nice to look at and feel the closeness of my grandmother.
Childhood memories came back to me: we lived in a village near Lake Balaton in Hungary. Fresh scents, fresh vegetables everywhere. Animals, chickens, geese, ducks, cows, sheep, gathered around a cluster of greenery. In the evening, I would gather fresh eggs and bring them to my grandmother. In the garden, I would pick strawberries and bring them along with the fresh vegetables. I would collect eggs from the chickens and bring them to the kitchen. I remember: my grandmother prepared a bowl, into which she placed the egg whites of four eggs, sugar, and started whisking them vigorously with a hand whisk to create a stiff foam. When it started to solidify, she carefully washed the strawberries and gently folded them into the egg foam. Then she put the whole thing in the refrigerator overnight. The next day, after lunch, I joyfully indulged in the light strawberry mousse.
As I was flipping through the old recipe book, this simple and wonderful recipe caught my attention, which I will prepare for you today. Watch the video and make it at home, whether for friends or family. I'm sure it will be enjoyed and transport you back to the beautiful old times, back to the past.
Ingredients:
2 cups fresh strawberries
1/2 cup granulated sugar
1 tablespoon lemon juice
2 egg whites
1/4 cup powdered sugar
Fresh strawberries for garnish
Instructions:
Wash and hull the fresh strawberries. Cut them into small pieces.
In a blender or food processor, puree the strawberries until smooth.
In a saucepan, combine the strawberry puree, granulated sugar, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens and the sugar is dissolved. Remove from heat and let it cool.
In a mixing bowl, beat the egg whites using an electric mixer until they form stiff peaks.
Gradually add the powdered sugar to the beaten egg whites and continue to beat until well incorporated.
Gently fold the cooled strawberry mixture into the beaten egg whites until well combined.
Pour the strawberry mousse into individual serving dishes or a large serving bowl. Refrigerate for at least 2 hours or until set.
Before serving, garnish with fresh strawberries.
