Oatmeal Cake with Delicious Coconut Pecan Topping
Oatmeal Cake
Cake Ingredients:
1 1/4 cups boiling water
1 cup oatmeal
1/2 cup butter, softened
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
Topping Ingredients:
1/4 cup butter, softened
2/3 cup brown sugar
1/4 cup milk
1 cup coconut
1 cup pecans, chopped
Cake Directions:
Preheat oven to 350 degrees. Grease a 9” x 13” baking pan.
Pour boiling water over oatmeal. Set aside.
Cream together butter, sugars, and eggs. Add oatmeal mixture and the remaining dry ingredients. Pour batter into greased 9” x 13” baking pan. Bake at 350 degrees for 30 minutes. Cool cake and add topping.
Topping Directions:
Turn on oven broiler. Mix together all ingredients and spread on cooled cake. Return cake to the oven and bake for 2 minutes or until topping bubbles and is slightly browned. Watch carefully so topping doesn’t burn!
