Pumpkin Coconut Compote/ Doce de abóbora com coco.

1,5 kg pumpkin/ abóbora
500g sugar / açúcar
6 cloves / cravos
100g coconut flakes / coco em flocos sem açúcar

In a Dutch oven, bring all the ingredients to a boil and, when the pumpkin starts releasing water and the sugar starts melting, lower the heat to low and let it cook until it falls apart. That should take anywhere from 30 to 45 minutes.
When the pumpkin is cooked and falling apart, mash it with a potato masher until roughly puréed, add the coconut and cook for 10 more minutes.
Let it cool before serving. The compote can be served cool or at room temperature.

Em uma panela, leve ao fogo todos os ingredientes e, quando a abóbora começar a soltar água e o açúcar derreter, abaixe o fogo e deixe cozinhar até desmanchar. Isso deve levar de 30 a 45 minutos.
Quando a abóbora estiver cozida e desmanchando, amasse com um espremedor de batatas até obter um purê grosseiro, acrescente o coco e cozinhe por mais 10 minutos.
Deixe esfriar antes de servir. A compota pode ser servida fresca ou à temperatura ambiente.
