When I ask people if they ever ate Iguana 99.99% of them say no. I've cooked Iguana 3 times now and have to say I am a big fan of Iguana catch and cook meals.

Iguana is a tender meat when slow cooked properly. People in Florida usually keep Iguanas as pets, but they have become out of control, invasive, overpopulated and now they have become a recipe for a catch clean and cook episode on the South Florida Fishing Channel
