Off Grid Cooking - Pot Roast (Obstacles Conquered)

Sometimes you run into challenges when cooking Off Grid, like when the sun sets early, or it is suddenly overcast and you have food in your Solar Oven. We initially seared the Pot Roast on the Rocket Stove and then put it into the Sun Oven to slow cook. At the end of the day, it wasn't as tender as we would like so the plans were to continue the next day. To our surprise, it was cold, overcast and snowing SO we had to come up with another plan. Coals it is. Off Grid Cooking can be difficult, but it was so worth it.
