Cheesy Hashbrown Casserole Just Like Cracker Barrel

My son and I made some Copy Cat Hash Brown Casserole from Cracker Barrel and it turned out great. This was very easy and you could definetly make it the night before to have it ready in the morning.

Recipe:
-32 ounces frozen shredded hash browns thawed
-½ cup melted butter or Margarine
-1 10 ¼ ounce can of cream of chicken soup (or cream of cheddar)
-1 pint sour cream
-½ cup onion finely chopped
-2 cups colby cheese grated, divided
-¼ teaspoon pepper
