It's a versatile dish that allows you to use a variety of vegetables and adjust the level of spiciness to your taste. Here's a step-by-step guide to making Chicken and Vegetable Chow Mein:
**Ingredients:**
For the Chow Mein Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1/2 cup chicken broth
For the Chow Mein:
- 8 ounces chow mein noodles (or substitute with egg noodles or spaghetti)
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, minced

- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 1 cup snow peas or snap peas
- 1 cup bean sprouts
- 2 green onions, chopped
- Salt and pepper to taste
**Instructions:**
1. **Prepare the Noodles:**
- Cook the chow mein noodles according to the package instructions until they are al dente.
- Drain and rinse the noodles under cold water to stop the cooking process. Set them aside.
2. **Prepare the Sauce:**
- In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, and chicken broth. Set the sauce aside.
3. **Cook the Chicken:**
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken to the hot oil and stir-fry until it's cooked through and no longer pink. Remove the chicken from the skillet and set it aside.
4. **Stir-Fry the Vegetables:**
- In the same skillet, add another tablespoon of vegetable oil if needed.
- Add the minced garlic and ginger and sauté for about 30 seconds until fragrant.
- Add the sliced bell peppers, carrots, mushrooms, and snow peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
5. **Combine Everything:**
- Return the cooked chicken to the skillet with the stir-fried vegetables.
- Add the cooked chow mein noodles and bean sprouts to the skillet.
6. **Add the Sauce:**
- Pour the prepared sauce over the chicken, vegetables, and noodles in the skillet.
- Toss everything together to combine.
- Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and coat all the ingredients.
7. **Finish and Serve:**
- Taste the Chow Mein and adjust the seasoning with salt and pepper if necessary.
- Stir in the chopped green onions.
- Remove the skillet from the heat.
