Farm to Consumer was never a reality for those of us who buy animal protein from local sources. The USDA stood between you and your farmer. Unless your farmer was a huge entity and had a USDA approved processing facility on their farm which is rare, all beef, poultry, pork and other forms of animal protein had to be taken to a USDA facility for processing. Aside of the cost which was passed on to the consumer, it caused logistical obstacles for small to medium sized farms that made it impossible for them to be profitable. I'm sure this was not accidental. There's a window of time for us to help farmers AND help ourselves to access local meats at greatly reduced prices while making it safer for consumption.
