MASHED CHIPOTLE & FETA POTATOES

INGREDIENTS
1x bag of baby potatoes (mine was 750g)
2x tsp Chipotle Paste
2x tsp of Sourcream
2x Spring Onions
A handful of basil
Salt & pepper
1x Handful Feta

METHOD:
STEP 1:
- Pre-heat the oven to 200 degrees
- Boil the potatoes on a medium heat
- Meanwhile Chop the Basil and Spring onion and set aside
- Mix the Chipotle paste & sour cream together

STEP 2:
- Once the potatoes have softened, cut the potatoes through the middle and length ways creating a + Sign
- Placing the marked side of the potatoes facing downwards, using a cup squash the potatoes
- Top with the chipotle & sour cream paste
STEP 3:
- Place in the oven for 15-20 minutes until slightly crispy
STEP 4:
- Top with the Spring onion, Basil and Feta
STEP 5:
