Preparation:
Kafta Presentation: Shape your kafta into elongated rolls and pop a skewer through it, keeping the kafta towards the pointy end. Grill or cook them until perfectly done
Skewer Size: Sometimes, those skewers can be ridiculously long. Don’t be shy - give them a snip. Make them work for your presentation, not against it.
The Roll: Now, this bit is crucial. Don’t go the usual side-slice route. Instead, slice your mini roll from the top, creating a pocket. This makes for a much more dramatic presentation.
Assembly: Spread the whipped feta on both sides of the roll, make sure a generous dollop peeks out, for a beautiful creamy contrast against the rich tones of the meat.
Final Touch: Slide the skewered kafta into the bread, but don’t push it all the way down. Let it sit near the top, almost as if it’s proudly presenting the kafta to your guests.
Kafta Recipe
250 grams of lamb mince
250 grams beef mince
⅓ cup fresh basil leaves (firmly packed)
¼ cup fresh mint leaves (firmly packed
¼ cup chopped parsley with stems (firmly packed)
1 small onion roughly chopped (approximately 80 grams)
A strip of capsicum (approximately 25 grams) if not using the capsicum paste below
1 whole fresh chili (optional)
¼ teaspoon Bharat (see cook’s note)
½ teaspoon cumin ground
½ teaspoon paprika
1 tablespoon capsicum paste
