Since I live in a van, it's kinda hard to hit all of those cravings at times. I really wanted some good buffalo wings but wasn't willing to pay the price at the restaurant for them, so I decided to figure out a good way to make them on the stove top!

RECIPE

12 Wings
1 1/2 Cup Chicken Stock or Water
2 tsp Salt
1/3 Cup + 2 tsp of Hot Sauce
3 Tbsp Ghee

1) Place your wings into a saute pan and add your water/stock along with your salt and 2 tsp of hot sauce. Set over a burner at medium high to let begin to simmer. As soon as it starts to simmer, place a lid on top and let poach for 7 minutes. Once the timer goes off, remove the lid, flip the wings, and set another 7 minute timer.
2) After the wings have been poached, remove from the pan and reserve the chicken grease if any available. Wipe the pan out and add your ghee and set to medium heat.
3) Once all of your ghee has melted, carefully place down all of your wings and sear on each side for 6 minutes.
4) Add the remaining hot sauce to the bowl with your reserved chicken fat and add your hot chicken wings once they're been seared and toss.
