I was going to make a breakfast quesadilla and realized I just made an omellete. A handheld omellete! What is a quesadilla besides a handheld device for food to mouth? Check out the leftovers on your carnivore diet.

RECIPE

BREAKFAST SAUSAGE
1.5lb Ground Pork
2 tsp Smoked Paprika
1.5 Tbsp Grillaholics SPG +Butter
1/2 tsp Old Bay
1/2 Tbsp Kingsford Garlic and Herb Seasoning

OR

1.5lb Ground Pork
2 Tbsp Salt
1/2 tsp Black Pepper
3 tsp Smoked Paprika
2 tsp Granulated Garlic
1/4 tsp Celery Seed
1/4 tsp Dried Oregano

1) Add all ingredients to a bowl and mix for 2-3 minutes.

ASSEMBLY
4 Oz Breakfast Sausage
3 Oz Mozzarella, Shredded
2 Eggs
2 Slices Trash Cheese (American Cheese)

1) Brown your sausage in a non-stick pan over medium high heat and crumble. Set aside.
2) Place your pan back over medium heat and add in all of your mozzarella cheese. Let sit and allow to caramelize for 2-4 minutes or until lightly browned. Whisk your eggs
3) Pour your eggs directly on top of the cheese and allow to cook until not runny. Lay down your slices of american cheese and cooked breakfast sausage on one side. Fold over and serve.
