Sugar Free Mint Chocolate Ice-cream
This easy homemade ice-cream can also be made dairy free as I did it. I have a ninja creami or you can use any ice-cream maker.
Are you sugarfree? I am and feel so much better. No more bloat, loss of energy or sugar spikes.
1 cup of heavy cream
1 cup of coconut milk (almond milk)
1/8 tsp salt (brings out flavor)
10-15 Chocolate Mint Herb leaves(or 1 tsp mint and 1 tsp Chocolate extract to the warm milk instead)
2 tsp Stevia Glycerite (adjust to taste)
2 oz. Unsweetened baker's chocolate
1/8 cup heavy cream
*Warm both milks together in a sauce pan on medium while herbs are soaking. Bring to a slow simmer for about 2 minutes. Remove pan from burner and let sit for another 20 minutes.
Strain herbs with a colander into a bowl and add sweetener. Let cool or place in fridge until you are ready to use your ice-cream maker. You can also just freeze but will be a little hard.
To make chocolate sauce just add heavy cream and chocolate to a sauce pan on low until it melts and add a few drops of your stevia glycerite to taste.
