Roasted Chicken Breast Chopped Salad with Ranch

This chopped salad with roasted chicken breast is a great and satisfying meal for any occasion. When you roast chicken breast with ribs the chicken gets very moist, never dry. I roasted chicken breast for 40 minutes in 350F with convection setting (375 without convection). This chopped salad is great with ranch dressing. I used a lighter version of ranch but you can go ahead and replace yogurt with mayo if you prefer that. By blending the dressing using a blender you can make it smoother and thinner.

Ingredients
- roasted chicken breast (spices: 1 tsp garlic powder, 1 tsp sweet paprika, 2 tsp sea salt, pepper, 1/2 tsp dried oregano, 2 tsp olive oil)
- Romaine lettuce
- Cucumber
- Grape tomatoes
- Red onion
- Red kidney beans
- Roasted Bell Peppers
- Cheddar Cheese
- Sunflower seeds
- Ranch dressing: 140 g 5% Greek Yogurt, 40 g Buttermilk, 1 tbs red wine vinegar, 2 garlic cloves, 1/2 tsp dried oregano, salt and pepper to taste

One serving:
- Romain lettuce
- 4 oz chicken breast
- 2 oz cucumber
- 3 oz grape tomatoes
- 1 oz red onion
- 2.5 oz red kidney beans
- 1 oz cheddar cheese
- 2 oz of ranch dressing
