Lentinula edodes (Shiitake) Lentinula edodes or Shiitake is a delicious edible and therapeutic mushroom with high nutritional values. In Japan it has been cultivated for centuries and in their traditional medicine it is considered ‘the elixir of life’, as it promotes vitality and energy. Today Shiitake is widely cultivated everywhere and it is the second largest commercial mushroom product after Reishi. This mushroom is appreciated for its culinary, nutritional and therapeutic properties and it is one of the most studied in medicine along with Reishi and Trametes/Coriolus versicolor. Shiitake is a source of various compounds with proven pharmacological activities, including erytadenine, lentin protein, and in particular lentinan, a polysaccharide, originating from Lentinula edodes.
